The beginnings of a vocation
Both a culinary creator and an entrepreneur, Jean-Marc Perochon has embodied authentic French cuisine rich in emotion for over fifty years. As the head of Restaurant J.M. Perochon, a fine dining establishment located in Brétignolles-sur-Mer on the Vendée coast, he cultivates the art of living well and eating well in a unique setting facing the sea.
Nestled within Hôtellerie Les Brisants, a hotel-restaurant in Vendée, his establishment is a warm and welcoming house where the team is dedicated every day to offering attentive service and authentic flavours inspired by the terroir and local products of the Pays de la Loire.

A life of passion
Born in Vendée, Chef Jean-Marc Perochon discovered cooking at the age of 15 in the kitchens of the Hôtel des Dunes in La Tranche-sur-Mer. After earning his BEP and CAP in cuisine at the LEP Branly in La Roche-sur-Yon, he set out to explore new horizons: Scotland, Germany, Spain, followed by the United States and the Caribbean.
These travels nurtured his endless curiosity and shaped his vision of product and flavour.
Upon his return to France, he went on to lead several distinguished establishments before settling in Saint-Pol-de-Léon, where he ran L’Auberge de la Pomme d’Api for eleven years—an address praised by the Michelin Guide, Gault & Millau, and Bottin Gourmand.

The return to Vendée
In 2005, Jean-Marc Perochon and his wife took over Hôtellerie Les Brisants – Restaurant J.M. Perochon, located on Avenue de la Grande Roche, between Saint-Gilles-Croix-de-Vie and Les Sables-d’Olonne.
Their vision was clear: to create an exceptional Vendéen home — a place where refined cuisine meets the proximity of the ocean, the freshness of local ingredients, and the sincerity of craftsmanship.
Very quickly, the Michelin-starred restaurant established itself as an essential seaside destination in Vendée. In 2014, the Michelin Guide awarded it one star, recognising unwavering dedication and an uncompromising pursuit of excellence.
